The Heart of Christmas

Paper wrapped presents. Sparkling lights on trees of green. Fresh falling snow. Sugar cookies and gingerbread men. Hanging stockings. Candy canes. These are a few of the things that come to mind when we think of Christmas. Sometimes we get so caught up in all the decorations and shopping that we forget the real reason for the holiday, Christ was born. (Now I know that Christ was really born in April but His birth is still the "reason for the season"!)

This year has been especially difficult for me to remember the real reason for Christmas and even Christmas itself. With Meric set to deploy in February and it being our first winter in the trailer, other issues have been distracting me from enjoying the Christmas season like I normally do. There is a part of me that feels decorations would just be clutter. Looking for presents was more difficult and getting them sent off felt more rushed than usual. I am just finding it hard to focus on Christmas.

With all that being said I need to share a recent experience I had. Just after Thanksgiving I was busy getting ready for a visit from my dad and sister, Lissy. I was cleaning and organizing things I had been procrastinating doing for a while. As I was doing this I discovered a problem... mold. The mold was a result of condensation which is a common problem in winter trailering. Meric and I knew there would be a problem with condensation but were still figuring out the best way to combat it.The mold wasn't out of hand by any means but it was still a problem that needed to be remedied. Also I discover that the carpet on the bottom of our bedroom closet was wet. Not just damp from condensation but soaking wet from the rain outside leaking in. For a while there it seemed like everything was constantly damp. On top of all this Meric was getting mixed information about WHEN he would deploy. We were hearing everything from January 14th to March 3rd and with the holidays coming fast it was hard to schedule or plan for anything. Needless to say I was feeling a little stressed.

It was Monday night and my family was to arrive that Wednesday afternoon. It had rained non stop since Saturday night and the forecast was 90% chance of more precipitation until Wednesday afternoon.  I was beginning to hate the sound of rain on the roof, the exact same sound I once loved. With 3 dogs and no fenced yard I have to take them when they need to go outside. The constant rain had made it difficult to let the dogs go out and do anything more than just their "business". No play time had gotten old for the dogs and me too. So that night when I said my personal prayers I asked Heavenly Father for no rain the next day. As I laid down to go to sleep this thought went through my head: "Who am I kidding? There is no way He will stop the rain just for me." And with that I forgot about it as I drifted off to sleep. The next morning started early for me and I had lots to do. I took the dogs out to do their business, ran Meric to work and made an "early bird" stop at the commissary for groceries. As I walked out of the commissary and headed to my car a ray of sunshine peeked through the clouds. I had been so focused on everything I needed to do that I hadn't noticed until that moment that it wasn't raining. My first thought was "so much for the weather report" but then I remembered my prayer. All of a sudden I was filled with warmth and love and could almost hear a voice saying "see, I do love you". Standing in the commissary parking lot I started to cry. It was such an overwhelming feeling of being loved and know that my Father in heaven is aware of my needs. The rest of the day was still very busy and stressful but it didn't rain. I was able to take the dogs outside a few times, watch them play and enjoy the fresh air. I know it didn't rain that day because I needed it. All of my trials and stresses didn't go away but I could handle them better because of the moments I was given to take a break and go outside.

So what does this all have to do with the Christmas holiday? Nothing. It has to do with Christ. I think that the best thing about Christmas is Christ and I wanted to share my testimony. I know and am very thankful to have a loving Heavenly Father. I know that Jesus Christ was born, that he suffered for not just my sins but all of my pains, died and was resurrected. I know that prayers are heard and answered. I know that, even when I am by myself, I will never be alone. I know that I will have some difficult and lonely moments while Meric is deployed but I also know my Heavenly Father will take care of me. I know that my trials will not go away but I also know that trials are given to me by a loving Heavenly Father who knows what I need to become stronger. I have a testimony of Jesus Christ and the gift of repentance.

Christ was born. Christ suffered for us in Gethsemane. Christ died on the cross. Christ was resurrected. Christ loves us. Christ knows specifically who I am and loves me. What more could you ask for? Merry Christmas!

Dad and Lissy come to Kentucky

This past Wednesday my dad and sister Lissy came to Kentucky to visit me. They are the 1st visitors we have had in Kentucky and in our trailer. I was very excited to have them coming to visit but at the same time a little nervous. I was worried that they wouldn't like our trailer, worried that they wouldn't be comfortable or warm enough while sleeping, worried the weather would be too rainy and cold etc. Turns out I had nothing to worry about. (that is usually the result of my worrying) My dad chose to sleep in the back room in one of the recliners. I didn't need to worry about how cold he would get because, as he discovered, our electric fireplace is very warm. Lissy slept on the bed made out of our kitchen table and benches. She stayed nice and warm and learned the true meaning of "three dog night".


The beasties really enjoyed cuddling with aunt Lissy. Also the weather was beautiful for their visit. The sun came out Wednesday and lasted until Sunday giving us gorgeous days with only a slight chill in the air.

On Thursday we went to nearby Glendale. We had lunch at the Whistle Stop, a local restaurant that has great home cooking and famous desserts. After lunch we wandered through some of the little shops in Glendale and Dad got some good "Kentucky made" souvenirs. Next stop was Lincoln's birthplace. Here we were at Lincoln's birthplace and my dad discovered something he called amazing. There is a nice wooden walking path through the woods with garbage cans along the way. He discovered that if you lifted the lid and let it go, the garbage can lid went down slowly instead of slamming shut.

Yes, that is what my dad found amazing. We wandered around there for a bit before coming home for dinner and pie.

On Friday we spent the morning trying to get some good family pictures of Meric, me and the dogs. The dogs were a bit wiggly and I am not sure any of the pictures turned out, but we tried.

Then we headed to Fort Knox. One of the reasons I wanted my dad to come to Kentucky was because he had done his basic training at Fort Knox and hasn't been back since. Of course his basic training was a long time ago so most everything has changed. We also wandered through the Patton museum and Lissy and Dad got their pictures taken with some tanks.




Saturday we headed to Louisville. Lissy wanted to go to Churchill Downs and the Louisville Slugger Factory/Museum. Those are two things I have been wanting to do and haven't done yet so it was fun to play Kentucky tourist as a group. Churchill Downs was very interesting. Admission to the museum includes a 30 minute walking tour of the race track. I learned a lot about the track and the Kentucky Derby. For instance, did you know that the Kentucky Derby is the longest continuously running sporting event? It has happened every year for the past 137 years.

We then headed to Lynn's Paradise Cafe for lunch. It was recommended by one of Meric's co-workers and was a very quirky and delicious suggestion.


After lunch we went to the Louisville Slugger museum. We took a factory tour and learned a lot about the process of making baseball bats. Of course Lissy and I were in heaven with all the baseball stuff.


Then it was home again, home again and since we were all still full from lunch we had the rest of the pie for dinner while we played games. Not too shabby of a day.

Sunday was a bit more relaxed. We went to church, came home, had some chili and cornbread and then watched a movie. Up until Sunday the weather had been perfect. It waited until Sunday to rain and then rained all day Monday. Monday Meric went back to work. Dad, Lissy and I spent a lazy morning just talking and hanging out until their flight that afternoon. All and all it was a very good visit, we had a lot of fun and I miss them already. The beasties miss them too and all the extra attention they were getting. They most especially miss Lissy and cuddling on the kitchen table bed.

Thankfuls: Day 7

Happy Thanksgiving!

1. Freedom: I am very thankful to live in a country that allows me to be free. I am thankful for all of the men and women who have sacrificed so much so that I can enjoy that freedom. I am thankful for my agency and the freedom to choose.

2. GPS systems:  How on earth did I get anywhere before I had a GPS system? I love our GPS for the car and also our GPS that we use for geocaching.

3. Flip flops: I am thankful for shoes that are easy to put on and take off. They are handy when I don't want to put shoes on to take the dogs outside.

4. Amazon.com: Is it bad the the UPS man knows exactly which trailer is ours? Amazon.com is great when you need a specific item that you can't find in stores near you. I am thankful for a website that makes shopping super easy.

5. Heat/AC in cars: I am so grateful for heat and AC in cars. I am thankful that I don't have to freeze or roast when driving. Since living in the south, I have gained an appreciation for AC in cars especially.

6. Sharp knives: We have some good knives and some not so good ones. I am so thankful for the sharp ones. It is amazing the difference. I always thought that cutting up raw chicken was really hard until we got good knives, it is actually really easy. I am thankful for good  sharp knives.

7. Recycling: I love recycling. I hate feeling wasteful. I am thankful that I live some place that makes it so easy to recycle. I am also thankful for my canvas shopping bag that fits nicely in my purse.

8. Space heaters: I am so thankful for space heaters that help keep my house warm.

9. Internet: I don't know what I would do without the internet. I love to be able to watch my TV shows whenever I want to. I love that I can shop, look up recipes, and get new craft ideas and help on the internet. I am even more thankful that it is easy to keep in touch with family and friends who are far away. I am thankful that we can talk face to face even when we are across the country or even out of the country. I am thankful that I will be able to actually see Meric even when he is deployed. The internet is such a tool of convenience but more importantly it is a tool that helps me stay connected to those I love.

10. Snow: I haven't seen a lot of this in the last few years and I miss it. I love snow and how beautiful everything looks covered in a layer of white. I also love playing with the dogs in the snow.

So this is my list of thankfuls and there are countless others that should be on these lists. I am so thankful for all of my many blessings. I take so much for granted. Since this is the last day of my thankfuls and also Thanksgiving, I want to do one more.

11. Holidays: I am so thankful for all of the different holidays. I really love that Meric gets time off for a lot of the holidays. I am also thankful for how the holidays make us remember. New Years is a great time to reflect on what we have accomplish, to set new goals and to celebrate a new beginning. Valentine's day reminds us of the love we have in our lives and that we should express our love to others. The 4th of July reminds us of the blessing of freedom. Veterans day reminds us of all those who have sacrificed and those who continue to sacrifice for our freedom and country. Thanksgiving of course reminds us to be thankful. Christmas reminds us of Christ's birth and that we should be more Christlike and charitable.

Thankfuls: Day 6

1. Home: I am very thankful to have a warm safe home. It may be unconventional but it is mine and I love it.
2. Food: Not everyone has enough food or even access to food. I am very grateful that I have the means to get the food I want and need. I also am thankful I have the ability to cook. There is also a lot of healthy food that tastes great available now! I am also thankful that food likes me. I have not allergies and can usually eat whatever I like eating.
3. Vehicles: I am very blessed to have great vehicles. I love my truck and car. I am very thankful to have vehicles that run great and will take me where I want to go. (especially when I want to drive to Washington!)
4. Febreeze: With 3 dogs and a husband, Febreeze is a life saver. It works great and helps my home smell fresh.
5. Floss: Who likes having stuff stuck between their teeth? Floss is amazing and helps avoid cavities.
6. Geocaching: I am thankful for geocaching because it is a cheap activity I can do with Meric. After the initial expense of buying a GPS unit, we can plan an activity that is fun and doesn't cost a thing.
7. Lint rollers: With 3 dog lint rollers are a necessity. They are quick easy and super handy.
8. Music/Radios: I am so thankful for music. I am very thankful for radios especially car radios. I drove Meric's truck a couple of times when his radio wasn't working and it drove me crazy not having music. I also love XM radio. I love that I can drive across the country and keep my radios stations.
9. Carpet cleaner: Once again with 3 dogs a carpet cleaner is essential. (yes I am still thankful for the dogs.) It has been a life saver when we were renting. It saved me a lot of stress just the other day when I needed to clean a mess. (Not the dogs this time.)
10. Bug spray: When I lived in Spokane I rarely got bug bites. Since we have moved south I can't go outside in the summer without bug spray. If I forget the bug spray I look like I have chicken pox. I am thankful for all the different kinds of bug repellent.

Thankfuls: Day 5

1. Religion/Faith: I am very thankful to have a testimony of my Saviour, Jesus Christ. I can't imagine how hopeless and lonely life would be without the knowledge and faith I have in Christ. I know that He loves me, knows me and died for me. I am grateful to belong to the Church of Jesus Christ of Latter-day Saints. I am thankful that in all of our moves and the different wards we have been in the gospel stays the same. I am thankful for the Bible and the Book of Mormon. I am thankful for a living prophet and the opportunity I have to hear him speak. I am thankful for the priesthood and for temples. The list goes on and on and I am thankful for that too!

2. Barefoot shoes: (Now I am not talking about the five toed shoes. I have never tried them and I think they are ugly.) I am thankful for my barefoot shoes. They are very comfortable and feel great to run in. Also I trip a lot less! When I sprained my ankle a year ago I had a hard time getting it to heal if I wore my regular tennis shoes. I would always trip or catch my foot on something and re injure my ankle. With my barefoot shoes I feel more stable.

3. Electric toothbrush: Once you get an electric toothbrush it is hard to go back to a regular one. I am thankful for how much easier it is to brush my teeth and how much cleaner they feel.

4. Costco: I love Costco and I am thankful that I have one close enough to shop at. (It is an hour away but that is close enough for a monthly trip.) I get my dog food at Costco. I discovered Flat out wrap and Zipfizz at Costco. I got my pans that I love at Costco. I can get Tillamook cheese at Costco. Not everything is cheaper there but for the most part we have found really good deals at Costco.

5. Plug-in cooler: Since Costco is an hour away and I get cheese and meat there, no trip would be complete without my plug-in cooler. Also it comes in handy on long road trips.

6. Magic Bullet: I laugh at the infomercial when the lady said she used it so much she keeps it on the counter but.... mine is on the counter because I use it almost everyday. Meric and I do a lot of protein shakes and the Magic Bullet makes it quick and easy.

7. Right turn lights: I had never seen this until I moved to NC, but I love right turn lights. It is nice to have the light turn green and not have to stop and check.

8. Bluebell ice cream: By far the best ice cream ever!

9. Nail polish: I am thankful for nail polish because it is a subtle way for me to express myself. From black to pink to tye-dyed to sparkles I can express my mood.

10. Water bottles: I am thankful for water bottle because they are so handy. Also they are a must have if camping or back packing.

Thankfuls: Day 4

1. Friends: I think Clarence said it best, "No man is a failure who has friends." I am so thankful for the friends I have had throughout my life. I am thankful for the friends I have now. Where would any of us be without our friends? Thank you to all of my friends who have been there for me throughout the years.

2. Good neighbors: I am one of those people who rarely knows my neighbors but recently I have been aware of how nice it is to have good neighbors. When I decided to stay in Kentucky while Meric is deployed all of my neighbors at the camp ground let me know that they would be here for me. It is nice to have people around me that I can go to if ever I need anything. I love that we have such great neighbors!

3. Changing leaves: I am so thankful for all the fall colors. It just isn't quite fall without changing leaves. The world is an amazingly beautiful place.

4. Foreman grill: This thankful definitely falls under my "I am lazy" and "hate to turn on my oven in the summer" thankfuls. It is so easy to pull out the Forman to quickly make hamburgers or chicken. The one we have has changeable plates so I can use it to make waffles or bake cookies.

5. Nectar chocolate protein powder: Meric and I make protein shakes a lot. I am thankful that there are yummy protein powders to chose from. This particular one also works well for hot chocolate.

6. Converse all-stars: I have loved Converse shoes since I was in high school. They come in so many colors and are a great way to express yourself.

7. Garbage cans with lids: I am so thankful that my dogs can't get into the garbage. I have no space to put the garbage in a cabinet and garbage cans with lids make it so I don't have to worry about the dogs being tempted by anything I throw away.

8. Baked chips: I like chips ok but they are always so greasy. Baked chips are a delicious and healthy alternative. I am also thankful that there are so many baked chip varieties now.

9. Roaster pan: I love my roaster pan and so thankful I have it. Past Thanksgivings my roaster pan has made it so that my oven isn't tied up all day and I can get everything cooked in time for dinner. Now that we live in the trailer I don't have a very large oven so the roaster pan is essential for making turkey. Also I have never had a dry or under done turkey with the roaster pan. I am also going to experiment with making cheesecake in it!

10. Digital cameras: I love technology and how easy it makes things. I remember traveling to England with a regular camera and it wasn't until we got home and developed the film that we knew if we got good pictures or not. Now you can just take a picture and know right away if it is a good one or not.

Thankfuls: Day 3

1. The dogs: I am so thankful for my dogs. They are my kids and I love my little family. They are good company and protection whenever Meric is away. My beasties are so much fun too. I am thankful for how obedient Jasper is and how much of a momma's boy he is. I am thankful for how loving and sweet Lucy is. I am thankful for how adventurous and tough Emmy is. I love how they all have their own personalities and style of play and their different ways of smiling. I am very thankful for how sensitive they are to my emotions. They are the best kids any one could ever ask for!

2. Remote controls: I am super lazy and I am thankful that I can sit back and watch a movie without ever having to get up.

3. Salt scrubs: I love how salt scrubs make my hands feel.

4. Turkey bacon: I am very thankful to have a delicious healthy alternative to regular bacon.

5. Zipfizz: I love Zipfizz and am so thankful to have discovered it. I drink a lot more water now and have stopped drinking soda. It is a wonderful water additive that tastes great and has tons of vitamins!

6. Microwaves: I am very thankful for microwaves, especially in the summer. I hate turning on my oven in the summer so the microwave is a great way to warm up food. It is quick and easy. Like I said, I am lazy so anything that makes life easier is awesome!

7. Flat out wraps: These are another discovery I am very thankful for. They are very versatile and are great to have on hand. They work well to replace bread, tortillas, pizza crust, pitas, and more. They also taste great and are good for you. I am thankful to have so many healthy alternatives available to me.

8. Watching conference online: I am so thankful to live in a day and age where you can listen and watch the prophet speak from the comfort of your own home. How amazing is that? I remember having to go to the Stake center to watch conference as a kid. It is very hard to watch all the sessions of conference that way. Now if we miss a session it is still available online and we don't have to miss any of it. I love technology and all the wonderful advantages it gives to us!

9. Latex dog toys: My destructo-beasts are very hard on toys. Stuffed toys are un-stuffed in seconds and the vinyl toys are eaten just as fast. Latex toys are the best! They are tough toys and hold up to Jasper's tug-of-war games and chewing for about a year. With my babies that is a long time!

10. Sunshine: I love the sunshine! The warmth, the light, and how it helps things grow. I am also thankful for the sunlight after the rain and rainbows.

Thankfuls: Day 2

1. My Family: I have the best family. Wonderful parents, beautiful sisters, fun brothers and nieces and nephews. We always have so much fun whenever we are together. I love laughing and being loud with my family. I am so thankful and blessed to have a family who loves me. I miss them so much!

2. In-laws: I really do consider them family just like today's #1 but I did want to make a special thankful just for all of my in-laws. My siblings married terrific people who totally belong with our family. Meric's family is so wonderful too. They have accepted and love me. They truly make me feel like I am part of the family. I am so thankful to have all of my in-laws as part of my family.

3. Heating pads: There are certain times of the month where I am SO thankful for heating pads. They really help when I am uncomfortable and in pain.

4. LARGE parking spots: One of the vehicles I drive regularly is a big truck. I am so grateful for when I can easily pull into a large parking spot. It seems like a lot of parking lots are full of tiny parking spaces that make you nervous about door dings even in a car so I am very thankful for those large ones.

5. Flowers: Whether they are wild flowers on the side of the road or flowers given to me by my husband, I love flowers. All the colors and wonderful scents make me smile. Here in Kentucky one of the highway exits that I use regularly had hundreds of sunflowers growing next to it during the summer. Every time I passed that exit I couldn't help but smile.

6. Fireflies: Go outside at dusk during the summer and nature will give you a light show. It is so beautiful and peaceful watching fireflies. I am thankful to be able to live somewhere that can enjoy fireflies.

7. Air conditioning: After this past summer I would be remiss if I didn't mention air conditioning in my list of thankfuls. When the heat index gets ugly I am very thankful I can stay cool.

8. Cast iron skillet: I have a perfectly seasoned cast iron skillet. Everything turns out wonderful every time I use it. Cornbread is my favorite thing to bake in it.

9. Good toilet paper: Rough super thin toilet paper sucks!

10. Chocolate: Sometimes you just need chocolate to make things better. I love the variety too!

Thankfuls: Day 1

Lately I have been thinking a lot about how blessed I am and I figured this time of year is the perfect time of year to blog about it. I made a list of different things I am thankful for and am going to share the list with you. I think that 10 a day for 1 week leading up to Thanksgiving is a good way to share so here is day one... (this list is in no way complete and in a very random order!)

1. Meric: I had to start with the thing I am most thankful for and that would be my wonderful husband. What can I say, I got the best! He is so sweet, kind, and very patient with me. I am not the easiest person to live with or love but he seems to actually like it. He is so supportive and encourages me to be my best. He still looks at me like I am the most beautiful girl in the world. He is my best friend. We have so much fun together. He is a good provider and a wonderful father to our 3 beasties. I am so blessed to have Meric as my eternal companion.

2. Health: I am so thankful for my health. I have never been seriously sick or injured. I am also thankful for the knowledge I have that helps me stay healthy. I am so thankful to naturally have good health and also the ability to do my part to stay healthy.

3. Indoor plumbing: No having to run outside to use the bathroom... who isn't thankful for that? I can't imagine having to run outside on a cold morning to use the bathroom and I am thankful I don't have to.

4. Pizza: I love pizza! It is one of my favorite foods and I am very thankful when I get to eat it!

5. Candles: There are so many wonderful things about candles. They provide warmth, nice smells, light, and decoration.

6. Dog harnesses: My girls are not the best on a leash. I am so thankful for harnesses which allow me to have better control over them. I am thankful that I can pull on their leashes when I need to without choking them. I am also thankful that my girls love putting them on and make it easy for me.

7. Rain: I love the sound of rain. I love how it smells after the rain. I am thankful for how green and beautiful it makes everything.

8. Peanut butter: It goes with just about anything. Chocolate, pretzels, pancakes, sandwiches, celery, cookies, etc.

9. Fluffy bathrobes: I am so thankful for my fluffy bathrobe especially on a cold day! (I know Meric is thankful for his too. On cold mornings he will wear his bathrobe oer his uniform until he has to leave the house.)

10. Water filters: I never really thought about filtering water until I moved away from Spokane. (Spokane has great tap water!) I am thankful for water filter pitchers and water filters for the trailer's water. I am also thankful of small water filters that are so necessary when you go backpacking.

Be careful what you wish for...

Deploying is a part of being in the military. The question isn't if you will deploy it is when will you deploy. Some people want to be deployed while others dread and avoid it. I will give you one guess as to which category Meric is in. Meric has always wanted to be in the military and deploying is part of the experience he wants to have.

About a month ago Meric got an email that was sent out to all of the occupational therapists in the Army. It was regarding the up coming deployment slots and asking for volunteers. Meric and I agreed he should volunteer. He has gotten emails like this before and has volunteered then too. This time he was chosen to go. (if he hadn't volunteered he would have been sent next year anyway)

Meric will be deployed for nine months starting in February.

I was totally on board with him volunteering but when he told me he got it I started having second thoughts. I thought that deployment would be one of those things that never happened to us. It hit me all of a sudden "I am going to have to be without my husband for nine months." The first few days I could not talk about it without crying. It is going to be a hard nine months but I know that we will be okay. Like the times he volunteered before, I prayed that Heavenly Father would only send him if it was the right thing for us. I know that even thought it will be difficult it is an experience we both need to have.

One of the reasons we moved into a trailer is so that when Meric got deployed I could easily move back home to Washington. The first few days that is what I was planning to do but then I started to really think about it. First of all hauling a trailer up to WA in February means snow, slick roads and possibly closed passes. Living in a trailer in WA in February means really cold! Meric and I plan to someday live in the pacific northwest in a trailer in the winter, but I didn't want to have my first time be without him. Then I thought maybe I could move in with my family but then I really started to think about that. Living with my family would be fun (and I fully intend to make a long visit) but I am use to being on my own in my own house and it is hard to share. It also would have meant 6 rambunctious dogs in one house for nine months. Then I thought about just staying in Kentucky. That would mean being alone... or does it. As soon as I started thinking about staying here I was made very aware of how many people I have here for support. We haven't lived in Kentucky very long but it feels like home. Everyone at the campground has offered their help if ever we needed it. We have a wonderful ward with great home and visiting teachers. I have family and friends who are excited to come visit and spend time with me. As I thought of staying in Kentucky I was bombarded with people who cared about me and said they would help me not feel so alone. I am staying in Kentucky.

As much as I don't want to go without Meric for nine months (or any amount of time for that matter) I know that it is what needs to happen now for whatever reason. I know that it will be hard and that I will cry a lot but I also know that it will be okay.

Halloween x 2

Halloween is a big deal at our campground. Actually I have heard that it is a big deal at a lot of campgrounds around here. Our campground had two weekends to celebrate halloween.

Halloween #1: October 22nd

Meric and I didn't really know what to expect this weekend. Before moving here and living in a trailer we had never heard of people going camping for Halloween. The campground is packed with people and kids. There are people even camping in pop-up trailers and tents despite the freezing tempatures. In talking to the owners, Meric and I found out that most of the people here come every year for Halloween. Several activities were scheduled including pumpkin carving, a costume contest and trick-or-treating. It was nice to have trick or treating scheduled and be able to sit outside and hand out candy to all the kids. 
Since Meric and I are new to the campground the owners asked us to judge the trailer decorating contest. It was really hard to judge because everyone had such great decorations. I was amazed at how elaborate people decorated. There were several of those big blow-up decorations, grave yards, ghosts and ghouls hanging from the trees and much more. One of the ones that I picked as a winner had a fortune teller booth set up with a tv in it that showed halloween images and scary sounds.
After all the festivities Meric and I hung out with some of our "seasonal" neighbors.  A lot of the trailers that are here permantely don't have "full-timers" living in them they have "seasonals". Those are the people who have a trailer here and only come on the weekends or for vacations. It woud be like having a cabin or a lake house only it is a trailer on a campground. We had fun hanging out and getting to know some of our neighbors better.


Halloween #2: October 29th

This weekend is a lot different from last weekend. There are still a lot of people in the campground, but not as many as last week. The trailer decorations are more just strings of lights and not as elaborate as last weeks decorations. The decorations on our trailer could actually be in the running this week for best decorated. The activites are the same as last week and there are still lots of kids dressing up, but it isn't as lively as last week. The owners say that is usually how it is every year. One weekend is super lively and fun, while the other weekend is fun but a lot more somber. Last week there was a party everywhere you went but this week is a lot more quiet.

One of the seasonal people thought it would be fun to do a progressive potluck. A group of us met up at 8:00 and went from trailer to trailer enjoying food and drinks. People were mainly doing it for the drinks but there was a lot of good food too. It was a lot of fun getting to know more people and chatting with everyone. This campground is more like a community than any other place we have lived. Everyone is so nice and very helpful. Even though Meric and I weren't drinking we still had a great time and everybody made us feel right at home.

Now that Halloween is over that means the season is over. Some of the seasonal people pull their trailers out until next season and others leave them here. A few people said that if the weather isn't too cold over New Years they will come here to celebrate. It is kinda weird to see the campground so empty and quiet. It is nice at the same time because the dogs have a little more free reign over the fields now. But I can't wait until next season and the neighbors are back.

Fall Fun

Yesterday was a beautiful fall day. The sun was shining, the breeze had a slight chill and the leaves are changing colors. It was the perfect day to go out and enjoy some fall festivities.

Our first stop was Glendale Days. Our address may say Elizabethtown but when people ask where we live we say Glendale. Glendale is a tiny country town. The main street/downtown area is 2 blocks and there is no stoplight. Since we moved here I have heard a few people talk about Glendale Days and everyone said it was a must see. The 3rd Saturday in October since 1976 Glendale has hosted 'Glendale Crossing Festival' or Glendale Days. I was told that there would be 100s of vendors and 1,000s of people all in downtown Glendale. Knowing how little Glendale is I just had to see it for myself.

I wanted to beat the crowds so we got to Glendale 30 minutes after the festival had started. Even at 8:30 am it was getting crowded. Main street had been blocked off and there were 100s of booths everywhere. The vendors were everything from Amish people selling their wares to businesses selling their products. Some booths were people selling their homemade goodies. One lady had made different candies and fudge. We tried red velvet cake balls and pumpkin fudge first. Both were yummy but I loved the fudge so much that on our way out I got some more. They had fresh sorghum samples and I got a 1/2 pint of it. We also got some pumpkin butter. (I am thinking they will be very yummy on homemade biscuits.) For lunch we got some chili and a brisket taco. Both were really tasty and the booth was run by a cute little family. We ended up staying 3 hours and I definitely plan to go to it again next year.


Next we headed to Bernheim Forrest for Colorfest. Bernheim Forest is an arboretum and research forest. Think of Finch Arboretum on steroids. In 1928 a man named Isaac Bernheim bought 14,000 acres of heavily logged and worn out farm land. Over the years they have changed that land into a beautiful arboretum and forest with several trails, picnic areas, a research building, an educational center and several lakes. Colorfest has been going on for 16 years and has several booths and demonstrations. I just liked the sound of colorfest and thought that now might be a good time to check out the forest with all the leaves changing colors.

When Meric and I got there Colorfest was in full swing. It really was geared towards children and looked like a great activity. They had several different demonstrations about nature and birds and animals. There was a scavenger hunt, hay bale maze and hay rides. There were stations for pumpkin decorating and making art out of twigs, moss, leaves and other nature items. There was even a geocaching station where kids could go a find a geocache. (There are over 80 geocaches in the forest. Meric and I plan to spend a day geocaching there.) All and all it seemed like a great activity for kids and the forest was full of beautiful colors for us to enjoy. I can't wait to go back soon!

Waverly Hills Sanatorium

Last night Meric and I went on a tour of one of the most haunted places in America: Waverly Hills Sanatorium. It is a massive building located in Louisville. Apparently Louisville was on of the hardest hit area by the tuberculosis epidemic. In 1910, a two-story building was built to accommodate  40-50 patients. That was quickly over filled and so in 1924 they started building the massive structure that stands today. Finished in 1926, Waverly Hills opened its doors to over 400 patients. Even though it was considered the best TB hospital of its time, thousands of patients died there before a cure was discovered. Once TB was no longer an epidemic and the cure was found, they turned Waverly Hills Sanatorium into a nursing home. The nursing home was closed in 1982 due to budget cuts and the building was left to vandals and trespassers until 2001. The current owners are doing renovations and trying to restore the building. They run a haunted house in it for Halloween but they also do historic haunted tours and over night experiences. Meric and I did a historic haunted tour.


The tour started with a 30 minute video of different clips about Waverly Hills Sanatorium. One of the clips was from the 1930s and the others were different clips from TV specials like Ghost Hunters. If you go to their website you can watch the clips. (http://www.therealwaverlyhills.com/waverly_videos/) I thought the videos were interesting and a good way to get you psyched up for the tour.


Once we entered the sanatorium our first stop was the "body chute". The body chute is a 500 ft tunnel that slopes down. There are stairs on one side and a ramp on the other. When the sanatorium was open the ramp portion was actually a conveyor belt used to bring in supplies. There were so many people dying from TB everyday and the doctors thought it would be best for morale if the bodies were removed from the hospital out of sight of the other patients. So when patients died at the sanatorium they were take out of the hospital down the tunnel and out the back door. The tunnel was very long and very dark. Can you imagine what it was like to work in the tunnel? Long and depressing with lots of dead bodies.

We were then lead through the hospital and told some of the history and some of the ghost stories and sightings. There were stories of ghost children, a boy in particular that likes to play ball. Stories of a homeless man and his dog that were found dead at the bottom of an elevator shaft and sightings of their ghosts. One room in particular is said to be haunted, room 502. The 5th floor was where they kept the mentally ill patients. I don't know why they say room 502 is haunted though because the ghost story didn't take place in the room and has nothing to do with the insane patients, plus 502 was actually a linen closet/storage area. The story is that of a nurse who worked at the hospital and apparently hung herself outside of the room. The story goes that she was pregnant, unmarried and just diagnosed with TB. Of course there is always speculation as to whether she hung herself or was murdered but sightings of her on the 5th floor are common.

The tour was very interesting and entertaining. I like a good ghost story and love old buildings with history. Maybe next summer we will take a tour when it is more light outside so that we can see the rooms and inside better. The only disappointing thing was they didn't show us the morgue. That would have been cool to see.

Utilizing Space

One thing about trailers is there are a lot of storage compartments. The benches at the kitchen table are hollow and have lots of room inside. Lift up the bed and underneath is plenty of room to store all our bedding and extra blankets. The couch has a pull out drawer for more storage. Most trailers have lots of nooks and cranies for you to be able to store all of your things. But living in a trailer sometimes those nooks and cranies just aren't enough.

When we first moved into the trailer I had a hard time figuring out the best place to put our bread. I had already used most of the cabinets and needed a good place were the bread wouldn't get squashed. Our solution was to use heavy duty staples and attach a wire basket I already had to the bottom of a cabinet. Essentially we added an extra shelf.

Our trailer comes with two bathrooms. The main bathroom (that I have shown in a previous blog) has the shower and is next to the bedroom. The extra bathroom is a tiny room that has a toilet and a cupboard behind it. We never have used that toilet and don't intend to ever use it so we made that room into a closet. I use the cupboard for extra storage and we put hooks in there to hang our coats. We also have a step stool, vaccum cleaner, shop vac, and clothes drying rack that we store in there. The extra bathroom is such a convient closet.

We have also discovered some extra storage places. Underneath our utility sink is some room for storage, very much like any sink. Not too long after we moved into the trailer Meric was exploring to see what was behind some panels. He removed the panel from under the utility sink and discovered that basically nothing was behind it. We completely removed that panel and now have even more storage space under that sink.

The panel that we removed went towards another "storage tweak". By the TV in the back room there are shelves on either side. Since we hook our TV to the computer we removed one of the shelves and put the computer in its place. Meric put the panel on the bottom of the shelf and hung it up next to the front door. Now we have a shelf for my purse among other things. This shelf has come in really handy to keep some of the clutter off of my limited counter space. We also added the hooks under the shelf to keep our keys organized. (We ended up with an extra hook and I thought it was the perfect spot for my lovespoon!)

We have a few more ideas for adding extra cubby holes and storage to our trailer and are figuring out everyday the best way to utilize our space.

SUPER Foods

Meric and I have really been trying to get healthier over the last few years. It has been an interesting journey with good parts and bad parts. Eating right and exercising doesn't always come easy. It seems like we start, do well for a while and then something happens to get us off track. I can definitely say that good habits don't come as easily as bad ones. Lately Meric and I have been doing better and are getting back into those good habits.(knock on wood)

There are a few "super" food that I have found along the way. I thought I would share them with you. I talk a lot about protein but I want to clarify that Meric and I aren't doing an Atkins high protein style diet. We do a 40-30-30 style diet (at least sort of). That means 40% carbs, 30% protein, and 30% good fat.

GREEK YOGURT

I love regular yogurt and it is good for you but Greek yogurt has a little more oomph to it. The way that it is made gives Greek yogurt two times the amount of protein as regular yogurt. It is also thicker and creamier. Greek yogurt is also very versatile. Just add garlic and cucumber to plain Greek yogurt and you have tzatziki sauce to go on your Greek wrap. (Really yummy BTW). Also you can use it in cooking and baking. It is really easy to substitute sour cream with Greek yogurt to add a little bit more protein to your recipes. I am loving that Greek yogurt is becoming more popular because it seems like more companies are coming out with Greek yogurt options. I am loving the variety of flavors and brands that are coming out.

FLAT OUT WRAPS

Flat Out wraps are a food I discovered on a whim. Meric and I were shopping ate Costco when I first saw them. I had been wanting to do more wraps, so I thought I would give these a try. Boy am I glad I did! First of all they taste really good and are soft. I really hate dry wraps. Lately I have been trying out all of the flavors and I love all of them so far. These wraps are also high in fiber and protein. Comparing two pieces of bread to one wrap, you get at least twice as much protein (sometimes more depending on the flavor) and less carbs. Also I love anything with a good fiber content. The majority of people do not get nearly enough fiber in their diets and these wraps are a delicious and easy way to get some. These wraps are also versatile. I use them for all my wraps including Greek. I have used them as pizza crust too. Also if you go to their website you can find recipes for several things including desserts. There is a recipe on there that has you cook the wrap like french toast and layer it with berries and yogurt. I cannot wait to try it!

FLAX SEED

I love this stuff! Adding a little of this stuff to your diet gives you so many health benefits. Flax seed has wonderful nutrients and antioxidents. Also you get a good dose of the ever important fiber and omega-3 (good fat). And like the other foods I have listed, flax seed is versatile. I add this to protein shakes and smoothies and you can hardly tell it is there. It is easy to add to yogurts and cereal. Also throw some into anything you bake for an extra kick of nutrition. I love this stuff! Using flax seed makes it easy to get the fiber and "healthy" fat I need in my daily diet while adding antioxidents and other essential nurtients.

 COTTAGE CHEESE

I need to start by telling you that I don't like cottage cheese. I don't like the flavor and hate it plain or even with fruit. With that said, I love it and consider it a super food. I love cottage cheese as long as I can't taste it alone. When Meric and I first started our diet we discovered that carbs are easy to get but protein can be a little difficult at times. Cottage cheese is high in protein so I started experimenting on ways to use it. I discovered that cottage cheese is very versatile. I love mixing cottage cheese and yogurt for breakfast and blending it with some berries makes a wonderful dessert. I also love adding cottage cheese to pasta sauce. There is a "healthy" cheesecake I make with cottage cheese that is super delicious. So even though I don't like cottage cheese after experimenting a little I have come to love it.

So there are four of my favorite "super" foods. As you can tell versatility is a big factor for me as well as health benefits. What makes them super to me is all the different things you can do with them to add variety to your diet without sacrificing nutrition. Also anything with extra protein or fiber wins my heart. Food can be so delicious and nutritious!

Camping in the NC

Over Labor Day weekend Meric and I went camping with some friends in western North Carolina. It was a 7 1/2 hour drive to get to the campground but well worth it because we got to see some of our Fort Bragg friends. The camp sites were nice and surrounded by trees. We were far enough away from the other campers that having the dogs loose wasn't a problem.The only odd thing about the camp ground was the cemetery. We had to pass by it on the way to the bathrooms. I understand that the cemetery is old and was there long before the campground, but it is still a little odd. Also it was surrounded by a fence that had barbed wire on top. You would think it was to keep people out of the cemetery except the barbed wire was pointed inward instead of outward. It was like they were keeping things in instead of out. Spooky!  We were camping with two other couples and one of the couples had two boys and a dog. The boys were funny and would always move their chairs so that they were either sitting next to Meric or me. The youngest boy (about 3 years old) kept referring to Meric as my dad. He would ask me where my dad was or what was my dad doing. It was really cute. The dog that they had was actually a 6 month old puppy. It reminded me of how old my dogs really are. It was nice to go drive-in camping. It has been a long time since I have done that. Usually when we go camping we go backpacking. Of course there are some people who would consider the way we live to be camping.(Sorry no pictures. We took our camera but forgot to take pictures.)

Taking a Dump and Dumping the Tank

It ain't pretty but everyone has to do it. Using the bathroom in a RV is definitely different than using a regular one. Pretty much the toilet is a raised bowl with a hole in the bottom and a pedal on the side.

I will spare you any pictures of the inside :)

When you press the pedal half way down the bowl fills with water. When you press the pedal all the way down it opens the hole in the bottom and flushes the toilet. The toilet water or "black water" as it is called in RV lingo goes into a tank under the RV. Everything from the toilet collects in the black water tank until it is full, about one week, and then we empty it. Everything collecting in that tank isn't all liquid so we have to break it all down. At the beginning of every tank cycle we toss a chemical packet down the toilet hole.


The chemical packet dissolves in the tank and breaks everything down so that it all comes out of the tank smoothly. Like I said, it ain't pretty but everyone has to do it.

The black water tank isn't the only one that fills up and needs to be emptied, there is also the grey water tank. Grey water is the water from the sinks, shower and washing machine. Since there are so many sources of grey water that tank needs to be dumped at least twice a week.


Dumping the tanks has several steps. We need to shut off the water and disconnect the hose from the trailer's water supply and connect it to the tanks. We got quick connectors for the hose to make it easier when switching it from one to the other.


Then we open the black tank and let the sewage flow. We turn the water back on so that can help clean out the black tank. Opening the tanks is done by pulling a handle inside this compartment.


Once the black water tank is emptied we open the grey water tank. By opening the grey water tank second the grey water going through the hose helps clear the black water out of the sewer hose. When both tanks are emptied, we close them, shut the water off, switch the water hose back to the trailer's water supply, turn it back on and then we are done.

When we first moved into the trailer using the bathroom was kind of weird for me. It took me a little while to get comfortable with the idea of the way the toilet works but now it is just normal. The only thing I hate about using the toilet in the trailer is when I really have to pee. Before I use the toilet I need to fill it with water. Sitting there listening to and watching the water run is torture when you really gotta go!

Experimental Meals

One of my favorite things to do is experiment with meals. From trying new recipes to making them up, I enjoy experimenting. I am also very fortunate to have a husband who is willing to try whatever I make. Well almost anything, if you ever think that tilapia, brown rice and broccoli and cheese cream of soup all mixed together might be good, let me tell you that it is gross and not even Meric will eat it!

So I have been experimenting a little and thought I would share. Last night I made chicken, macaroni and cheese with steamed broccoli. Sounds pretty basic right? Well for the chicken I breaded it in crushed pretzels with a little ranch and garlic seasoning. Instead of using regular cheese for the macaroni I used white cheddar, butterkase, and yogurt cheese. Butterkase and yogurt cheese are both semi-soft cheeses so they made the mac and cheese so creamy I didn't have to add any milk. After dishing it all up, I thought it looked so good I had to take a picture. And after eating it, I would have to say it was delicious!


Another experiment was a result of laziness. When I make lasange I mix together sour cream, cream cheese, and cottage cheese. I take that mixture and layer it with meat sauce and lasange noodles. (I started adding spinach to it for some extra nutrition.) Lazy version is to take a scoop of the cheese mixture, roll it up in a lasange noodle and cover it with the meat sauce. It is all the same ingredients but without the layering. The last time I made it I ran out of lasange noodles half way through. As a result I got even lazier. I mixed the meat sauce and cheese mixture together. Then I boiled some tortellini and mixed it all together. The results... YUM! Adding the cheese mixture to the meat sauce made it very creamy and added great flavor.

I have also been experimenting with breakfast, mainly pancakes. My lastest creation was pina colada pancakes. I used a pancake mix and added crushed pineapple, coconut flakes and rum extract. They turned out pretty good. The pineapple made them sweet and the rum extract added good flavor. I couldn't really taste the coconut though. I am slowly starting to like coconut so I was okay with the light coconut flavor. Baby steps!
